924 Tequila, a product from the hillside and farms of Proveedora y Procesadora de Agave, Tres Hermanos S.A. C. V. Jalisco, México, is made from 100% Agave Azul. During the tequila process, the leaves are removed, exposing the heart of the agave plant, “the pina”. Approximately seven kilograms of pinas are required to produce one liter of Tequila. The Tequilas are all rich in smell, flavor, and are amazingly smooth in taste.
The more natural and slower the cooking process is, the more authentic the premium tequila obtained. The agave sits in either a large purposely built earthen pits, brick ovens, or now widely used autoclave tanks. Regardless of the cooking technique, the natural cooking process usually takes a very long time (up to 72 hours) cooking very slowly and precisely. The cooking process softens the pinas (“the agave”) by extracting the natural sugars, making it substantially easier to complete the milling process.
Premium distilleries are now turning to roller millers to produce premium tequila. Maestros tequileros argue that this process is an even better technique that provides richer tequilas since it breaks fibers that previous methods could not. During this process, the pinas are uniquely hand-crushed in order to extract the succulent sweet juices that will eventually become what is known as the final product.
Premium distilleries continue to use spontaneous fermentation without the use of pre-cultivated yeast. During the fermenting process, the maestros tequileros will ferment using either copper stills or stainless steel stills and modern distillation columns (also known as distillation towers) for mass productions, all using a slow, deliberate process needed to develop best flavors. Some tequila experts argue that using copper pots prevent sulfur from entering the final product. The stainless steel stills (also known as “stainless steel tanks”) are widely known in the premium markets. This process can usually take up to 72 hours.
During the distillation process, the maestro tequilero hand removes the heads and tails, superior and inferior alcohols that have a nice flavor, but are toxic components responsible for terrible hangovers. By removing as many heads and tails, he adds his signature to the final liquid. A well-done distillation means a good balance between flavors and less harmful tequila. During this step, the alcohol level reaches roughly 60% and by a reversing process, the level is brought down to the level that of tequila spirits, 40%.

For the bottling process, each bottle has been labeled and applied with the approved federal bar-coding labeling, identifying the CRT Maestro tequilero distillery, the Tequila brand owner, and the Tequila brand importer. Each bottle is meticulously completed and filled, one by one. The US TTB and the Méxican government must approve all brand labels and brand linkage before labeling and bottling of any Tequilas.
